Vegan Cinnamon Donut Cupcakes!



So I have had a few people ask me for this yummy recipe so here it is. I love the fact that you can make so many amazing yummy things without any animal cruelty!


What you will need

Self raising flour 1.5 cups
Pinch of salt
Caster sugar 3/4 cup (or less if you prefer)
Coconut or brown sugar 2- 3 tbsp
Cinnamon 2 tsps
Vanilla essence 2 tsp
Apple cider vinegar 2 tsp
Soy milk 1 cup
Vegetable oil 1/3 cup

Icing:
Icing sugar 3/4 cup (add more of less depending on your needs)
Nuttelex or dairy free margarine 1 tsp
Maple syrup 
Vanilla essence


Method

Heat oven to 160 degrees Celsius (fan-forced)

Place soy milk in a bowl and add apple cider vinegar. Wait a minute and add vanilla essence- stir and leave.

Mix all dry ingredients in a large mixing bowl. Add soy milk mix and stir well. Add oil slowly.

Use an electric whisk for best results. The batter should be quite thin and runny to ensure soft fluffy cupcakes.

Bake for approx 20 minutes or until they spring back when touched in the middle. Leave for 10 minutes then remove from pan to cool.

For the icing

Put icing sugar into food processor ( I used a mini food processor). Add margarine. Add vanilla essence. Lastly add either a few tablespoons of soy milk or hot water. Blend until smooth. You can add more of less icing sugar depending on the consistency you want.

Makes 12 cupcakes.
